For the second year running, we have been featured in the Wine Spectator Restaurant Awards, placing us among the world’s best wine restaurants.

Once again, we have been recognised by the prestigious American publication Wine Spectator in the ‘Best of Award of Excellence’ category for our outstanding selection of wines.

In 2025, we are once again celebrating, for the second year running, the Best Award of Excellence at the Wine Spectator Restaurant Awards 2025, a distinction that ranks us amongst the world´s finest wine restaurants. One of the most influential and respected publications in the sector, with millions of readers across the globe, who will be able to find us in the section of its website dedicated to restaurants distinguished for their wine lists and excellence in service. Furthermore, we will feature in the next print edition of the magazine, which is distributed worldwide.

This award, presented by the prestigious American publication Wine Spectator, highlights restaurants with exceptional wine lists, both for the quality and the diversity of their wines. At Ambivium, we have been awarded the Best of Award of Excellence, a distinction that recognises restaurants with particularly comprehensive wine lists, both in terms of the diversity of regions and the depth of vintages and prominent producers. The quality of the wine’s presentation, storage and service is also taken into account.

At Ambivium, wine is at the heart of everything

From the very beginning, one of our core values has been a firm commitment, unique in Spain, to creating experiences centred around wine, pairing each culinary creation with a wine selection designed to delight.

In 2022, we took it a step further with the opening of our new wine cellar, a space open to diners that allows them to view our full wine list in person. With a capacity for 7,500 bottles and over 5,000 wines, its functional, wraparound design is organised across two floors connected by a spiral staircase.

Your visit begins on the ground floor, where we showcase the wines of Alma Carraovejas: Pago de Carraovejas, Ossian, Milsetentayseis, Viña Meín Emilio Rojo, Aiurri, Marañones, as well as the international wines selected by our importer, SV Wines.

As you go upstairs, the first floor takes you on a journey through the world of wine, featuring iconic regions such as Ribera del Duero, Napa Valley, Champagne, Bordeaux, Burgundy, Germany, Piedmont, Rioja and Jerez. But we also wanted to give a nod to many other countries, including legendary producers, unique vintages and true oenological gems, even from wineries that are no longer in operation.

Cellarium and its pairings

Our Cellarium tasting menu ives its name to a cuisine that is honest and thoughtful, inspired by the classical Latin term used to refer to the cellar or pantry where food and wine were stored. In this fourth season, under the title “Cellarium: roots and future”, we are consolidating an approach that goes beyond simply preserving produce: it connects us with the traditional techniques of Castile and with a contemporary perspective from our R&D&I department.

Wine remains the central theme of the entire experience, fully rated by Wine Spectator, and our pairings are designed so that every glass finds its ideal accompaniment:

  • Alma Pairing features new wines from Alma Carraovejas’ emerging projects. It is a journey that transports us to the past, with our feet firmly in the present and our eyes set on the future.
  • Summum Pairingis our ode to wine at its finest: a unique experience allowing you to enjoy exceptional wines from iconic producers, unique vintages and one-of-a-kind projects.
  • Sinfonías para el recuerdo Pairingis our latest pairing, available on request. A limited and carefully curated selection of unique bottles, designed for the most discerning diners.

Wine Spectator Restaurant Awards

The Wine Spectator Restaurant Awards, known as the ‘Oscars’ of the wine restaurant world, are the only awards in the world dedicated exclusively to recognising excellence in wine service and selection in restaurants. They were established in 1981 and are currently divided into three categories: Award of Excellence, Best of Award of Excellence and Grand Award.

This award is presented by Wine Spectator, the world’s most influential international wine publication, with a global readership of around 3 million. Available in print, digital, via an app and at events, Wine Spectator examines wine in all its facets: from the vineyard to the table, exploring its role in contemporary culture and offering reviews and authoritative expert content.
